I guess that's because they're used to it. Lag happens to me a lot because I fight people outside the continent and still be able to pull off combos. The easier ones at least like those bread n butter combos. Trying to perform those Mishima EWGF combos on 1 bar has an 80% chance of failing.

It's a possibility that the players only play online and thus are acclimatized to lag, or practice with the Input Delay set to 1-bar.
