Pai's really weird though. She either utterly destroys you, or gets beat. Well at least against Ayane due to her high damage.

Looks plenty viable enough to me, so I'd say just do what you feel most comfortable with.
I think more people are adjusted to fighting Sarah than Pai, so you might get an advantage throwing her out there.
