This posts contains all information about ethereal gear in Nioh I am personally aware of. This may, or may not be a work in progress and information may, or may not be (and stay) accurate.
We will do this Q&A style for the most part.

I’m still only my first play through, is this relevant to me?
No. This is end game content and requires BOTH currently available DLCs!

What is ethereal gear?

Ethereal is a new rarity introduced with the Defiant Honor DLC all types of equipment can drop as ethereal items (melee weapons, ranged weapons, amor and accessories). As of this writing no ethereal consumables/materials etc. exist.

Why should I care?
Ethereal gear has higher base stats than their divine counterparts in addition a variety of new divine and ethereal affixes can only be found (and rolled) on this kind of gear. Finally generic gear receives a random, exclusive set bonus (if the item naturally filsl all 7 slots, one rollable slot is replaced with the set bonus)
However gear that is already part of a set will keep it's bonus, there is currently no known method to obtain an ethereal set bonus for these pieces.

How do I obtain ethereal gear?
Items of this rarity only drop in the currently highest difficulty Way of the Wise(WotW)/NG+++ it thus requires both DLCs and clearing the mission “The Queen’s Eyes” in Way of the Demon. Ethereal items can drop from any source, however they are exceedingly rare. The highest drop chances offer strong enemies like Bosses, Reds and enemies spawning from Yokai realms, also some high profile loot spots offer a chance at ethereal items. The usual methods to increase your odds seem to apply.

Can I craft Ethereal gear?
No, the gear has to drop from enemies.

Can I obtain ethereal gear from player Revenants?
Yes, but there is a fairly high chance that 3 divine fragments drop instead of the desired item.

What happens if I dismantle ethereal gear?
You will receive 3 divine fragments.

Well with the basics out of the way, here are the currently known set bonuses. Keep in mind that there are 9 slots available to obtain a 7 piece bonus. All bonuses have the form “Grace of {some shinto deity}”, so I will just list the name.
(Bonuses are listed as they appear on the equipped Lvl 250 gear)

Amaterasu
  • 2 pieces: Damage Reduction 3.0%
  • 3 pieces: Life +640
  • 4 pieces: Close Combat Damage +13.2%
  • 5 pieces: Change to Attack(Spirit) A
  • 6 pieces: Ki Recovery Speed +31.0%
  • 7 pieces: Zero Ki Bonus (Attack Damage x2)
Tsukoyomi
  • 2 pieces: Damage Reduction 3.0%
  • 3 pieces: Onmyo Magic Power +62
  • 4 pieces: Close Combat Damage +13.2%
  • 5 pieces: Ki Recovery (Timely Guard)
  • 6 pieces: Onmyo Magic Damage Bonus A+

Some data points on rarity and set bonus distribution
I farmed ethereal Rifles from a loot spot in “The One-Eyed Dragon's Castle”, since ethereal ranged weapons are hard to come by here is the data I collected. I had +515 Luck and used Luckbringer.

Droprate
From 112 loot attempts (224 items) 11 were Rifles and 13 were Footwear. So 24 out of 224 items were ethereal, or ~10%.
Also means about 10% chance to see Ethereal Rifles, or Footwear respectively per loot attempt.

Since I wanted Rifles with a specific set bonus, I captured this info as well, and is shown below:

after that I counted the occurrences for all ethereal items I found so far

Overall sets occurrences seem to be roughly equal for all Grace sets.

*Futsunushi only drops from Revenants so you might want to ignore this, since the method to obtain gear with this bonus is different.

Thanks for the info. I've seem to get about 4 or 5 per Twilight mission run. They seem much rarer in the regular levels. The Kagustuchi set bonus seems to be strongest, thus far.

Can ethereal equipment be soul-matched with divine gear for (+) scaling and vice-versa?
Also, do we know the current item level and (+) limit?

You can soulmatch with divines and use them as fodder for divines and the normal rules apply. I think the standard pricing modifiers for quality differences apply as well, but I didn't really pay much attention tbh.

The item level max is 250 for forged and probably 260 for dropped (probably not worth it again). Plus level cap is +30 afaik with drops going up to +24-26, so basically same situation as last DLC just 50 levels higher.

Funny shit here, I've gathered the Susano one fore Bare Hands and swapped all the way back to Way of the Samurai on the first mission. Walked up to Onryoki, punched him in the face once, and he died.

I seem to be almost done gathering the Earth one, but most of the Ethereal items I've gathered has been multiple ones for like the chest piece or feet.
