I think most in DOA besides some of the more natural styles like Kokoro and Helena are hand done, I notice you can kind of tell if you watch certain moves frame by frame in the replay mode where they go in positions that are impossible to really do like alot of Kasumi's attacks

I assume the vast majority is animated by hand, because much of DOAs moves are so over the top and literally impossible to do by a normal human being. When you stop the game in photo mode you also often notice the very contorted bodies. With motion capture this would be less often the case.

I forget where I saw it but they mentioned that the animations in DOA were done by motion capture and then they tweak them afterwards. If you look in the credits, they have Motion Capture Performers.

Not sure about DOA, but I remember watching a documentary on Ninja Gaiden (2) where Team Ninja said that their animations were achieved first through motion captured which was then touched-up frame-by-frame manually (like Keylay said). So they basically combined both methods, and the result was the slickest-looking action in any game to date.

DOA1 def used motion capture and I think the others did too in instances, like Keylay said some are even credited

Motion capture animations are by the way always tweaked afterwards by hand.
