So I've been looking to different methods of data collection when it comes to fighting games. Luckily, Street Fighter player PR Balrog released a Google Doc of the same spreadsheet he uses on his stream to calculate his wins and losses during online play. With the doc came another blank page for a player to fill in their own data. I took it a step further and made charts for all the games I play, especially DOA. So my gift to you is a link to the doc! You will find a few examples of how the charts look with my personal mains on it, and there's an empty template page so you can go in and start your own data.
