You can SE them but you will still get a free hit for your 50/50 mix up or a launcher. The only one that doesn't really grant a hit is her low punch hold. All the other ones it doesn't matter how fast they are SE'd.

All of Pai's move are still there. The properties and frame advantage of those moves have changed greatly. Which is why most VF players have a problem with their character in DOA. Although those changes where made so that the VF characters can fit into DOA, so you have to roll with the punches...
