Only issue I've had with lobbies (and I'm on Xbox 360) is that sometimes if I join one and spectate for a while then change to fighter it will keep me at the bottom of the list and I'll never get a turn unless I back out and rejoin.

Honestly, I use holds like I should use blocking. I never, ever block. It is the biggest issue I have. I just am in this mentality that if I block one move, I'll just get thrown. Certainly not the case. So I just hold and hold. I lose a lot of life that way.

Well, in my playing time every S I've seen just annihilates every other player in the lobby, none of which rank above an E. They have like 20+ wins. I get that the ranking system is cheap and I know that some low level players just do simple and lobby and don't bother with ranked.
