Great suggestions! Yes, these are all excellent. Sword of the Stranger in particular is probably one of the best anime out there. Bizarrely, besides the classic Ninja Scroll and Basilisk, there is virtually no quality serious ninja anime out there----a huge void which I do not understand why nobody capitalizes on.
Anyway, here are a few other great anime to check out in the samurai/ninja theme:

I know! I so wish we see more Karas someday. I think it is crazy that Tatsunoko does not do more with it...

Berserk thats easily my favorite overall. I have only read 2 mangas Berserk and Ichi the Killer both really good. The live action Ichi doesn't even come close to how crazy the manga is.

Looks like I'm way late since I last commented, but I've been on my anime stuff lately. Dragon ball series, Sailor Moon, Yu Yu Hakusho, Pokemon, Ruroumi Kenshin, Ronnin Warriors & Mobile Suit Gundams are priority #1 for me. I also like One Piece, InuYasha, Kiekider, Cowboy Bebop... You get the drill. lol. I don't like Naruto lol. Sorry.

Dragonball GT was a continuity made by Toei itself, and did not involve Akira Toriyama in any way. Now that he's making his own continuity, GT is now redundant.
On the subject of Sailor Moon, the official main voice cast will be revealed in an upcoming event in Japan on April 27. What's known so far is that Kotono Mitsuishi (Christie) is reprising her role as Usagi Tsukino / Sailor Moon, and Toru Furuya will likely be reprising her role as Mamoru Chiba / Tuxedo Mask.

Mushi-shi season 2
Currently watching Fairy Tail so that I can start on the new series they just kicked off. I guess it's a higher quality production all around but still continues the same story. I'm on episode 70-something I think so I have a ways to go. Digging it though.
