Lack of sword and shield makes me sad. But that's not all really, I have an intense hatred for the Victorian era and I firmly believe it is just about the worst medium to tell dark fantasy in.
First, think about common themes that are acceptable in that era. Werewolves, vampires/undead, shape shifters. Generally "creatures of the night" or "creatures of deception". It's a common theme and everything else is out of place. So what don't you get? You don't get elementals. You don't really get wizards. You don't get knights in shining armor (and all the fun choices of weaponry associated with that). You don't get dragons. You don't get giants. You don't get angry goblin or orc hordes. You don't get dwarves, elves or other loosely associated races.
You don't get a setting where unrealistic expectations are allowed in regards to your environment, because your environment is firmly buckled to fit a very specific stereotype. Ash Lake can't exist in the Victorian era, because the setting rejects the image of such incredible possibility as an underground lake forest. The Hydra can't exist there either. A horrible, fleshy golem could certainly exist within the confines of some cretins underground laboratory, and it most certainly will because there is almost nothing else to work with. But it could have existed in the medieval as well.
Your options for that kind of fantasy are completely and utterly bottlenecked into a very strict set of stereotypes. Disappointed.
Lords of the Fallen is looking to be a better successor to the Souls games. Seriously impressive looking game.
If I liked that playstyle I wouldn't use a shield, would I?
You're not going to convince me that I'm going to enjoy a playstyle that requires aggression. I haven't for the last 20 years and I'm probably not going to start with bloodborne.
